THAITALIAN opens onto the Flow Rider at Waterbom Bali surrounded by lush gardens & slides. A purpose-built high ceiling Wantilan made of 90% recycled wood from Waterbom's first tower. The interior is a traditional, modern fusion with Thai, Italian design accents. The atmosphere is cool and relaxed. The open theatre kitchen provides lively visuals and aroma of street food in a stylized way. Pizza and roti dough stretched and thrown in the air, smokey sizzle from the grill, steaming baskets of sticky rice, noodles tossed in a flaming wok, pasta twisted on a plate, som tum pummelled in a wooden mortar, prosciutto sliced by hand. The menu offers paralleled favorites such as pasta and noodles, pizza and roti, grill and salads as well as easy snacks like Springrolls and calamari fritti. Thaitalian recipes have mostly been acquired directly from street food vendors or authentic home cooks, giving the food a homey style. With quality local ingredients, including organic local mozzarella and fresh herbs from THAITALIAN’s kitchen garden behind the cafe. There are also a few fusion items that punctuate the menu such as, Thai bbq chicken & pineapple pizza. Desserts include street style banana roti with condensed milk, palm sugar, and sea salt crumble, classic tiramisu and seasonal mango and sticky rice. Fresh juices, cold beers, tea, coffee, mocktails & cocktails are made to order at the bar.

Esarn Grill

Esarn is the Northeast region of Thailand home to important bronze age sites with evidence of some of the earliest rice cultivation in the world. Glutinous 'sticky' rice has become the staple of this region because its texture made it easy for rice farmers to take it for lunch in the fields. The rice would normally be accompanied by grilled, fish, meat, chicken or pork, raw vegetables, herbs, and sambals. Today at THAITALIAN, customers can order this rice farmer's lunch box made with family recipes passed down to our chefs by Kruewan, the daughter of an Esarn rice farmer.

Chef Profile

Ni Luh Putu Septiadiari

Ni Luh Putu Septiadiari is a homegrown chef from Desa Baturiti Tabanan, Bali. She learned the love of cooking from her mother and chose to join the Cooking Department at her Vocational High School, PGRI 5 in Denpasar. After graduating in 2012, she directly joined M&M, working at Waterbom's Food Court II as the cook's helper. She quickly showed passion and promise and was transferred to Bali Banana as a chef de parti. When Thaitalian opened, she was given the opportunity to join the opening team and became assistant to the head chefs. NI LUH was promoted to head chef of Thaitalian in 2016 and became the first female Head Chef at M&M Food Couture & Concepts. Chef Ni Luh says 'I enjoy working with the THAITALIAN team the most, not just the cooks, also the stewards and the service team'.
