Filippo Abisso

With 24 years of international experience in the culinary industry, including two Michelin-awarded restaurants in Italy, Shangri-La hotel & resorts and Banyan Tree resorts, Chef Filippo brings a wealth of knowledge and a passion for excellence. Before joining Fairmont Sanur Beach Bali, Chef Filippo was responsible for the entire culinary operation and management at Shangri-La’s Le Touessrok Resort & Spa, Mauritius. Prior to this, he worked at Shangri-La Villingili, Banyan Tree in the Seychelles, Maldives, Banyan Tree Angsana & Laguna Golf Bintan in Indonesia, where he held the title of Area Executive Chef. Chef Abisso’s worldwide culinary experience has allowed him to develop an unrivalled passion for gastronomy. I have every faith that he will bring something unique to Fairmont Sanur Beach Bali and also the dining scene in Bali. As Fairmont Sanur Beach Bali’s Executive Chef, Filippo is responsible for establishing new standards and creativity to the already innovative menu concepts and eclectic cuisine standards at the resort's diverse dining establishments, including Pier Eight Bali, Layang-Layang, Nyala Beach Club & Grill, and the Lobby Lounge.
