The enchanting setting at Dulang is surrounded by a chef’s garden featuring dozens of herbs and spices. Entering the ornately carved gazebo with its lavish furnishings takes you back in time to the colonial era, as you are greeted by majestic staff offering traditional Loloh Cemcem, meticulously prepared with indigenous herbs from a beloved family recipe. Dulang’s menu is inspired by the very best of Balinese cuisine, served on a dulang, or namely a Royal Plate. End the evening with a renowned kopi luwak and be inspired by the soft tunes of Rindik and traditional local dance.

Balinese “Rijsttafel inspired by the traditions of a royal feast by dinner, served on a dulang – the traditional royal plate, from which the restaurant takes its name. End the evening with an original Balinese dessert and sample the islands famous Kopi Luwak.

Chef Agung Ardiawan

Chef Agung began with the St. Regis Bali during its opening after over 10 years of senior management positions within kitchen teams in various hotels in Bali. He brings to this role a creative ability to reinvent and add new menus and recipes as the food venues of The St. Regis Bali Resort continue to grow and adapt to the ever changing market demands. Under his helm, he created Gourmand Deli’s first full lunch and dinner menu with French and Italian epicurean delights and also pioneered the extension of Boneka restaurant to the intimate Dulang restaurant, an authentic Balinese restaurant surrounded by the lush tropical park. As the St. Regis Bali’s Head of Culinary, currently he manages the resort’s 4 award-winning dining venues and 2 bars, including the iconic signature restaurant Boneka and the specialty beachfront fine dining Kayuputi Restaurant.
