Daine Gilbert

Mr. Daine Gilbert is the Executive Chef of Sofitel Bali Nusa Dua Beach Resort. A native of Australia, Chef Daine is someone who is exceptionally enlightened about the culinary arts. As head chef across three continents Chef Daine’s expertise draws wide from his multi-cultural exposure and background. Beginning his career in the higher tiers of fine dining Chef Daine acted as Executive Sous-Chef in Brisbane Australia where he specialized in the techniques of Japanese cuisine. Chef Daine- as a self- described perfectionist and as someone driven to rise in the art – early in his career stepped up into the superior management role of Head Chef at The Abingdon Restaurant in London England. From there he went on to work as Head Chef at various fine dining resort kitchen in countries including, Spain, India, before retuning back to his home country of Australia. Chef Daine is responsible for the entire culinary department, which includes Cucina, Kwee Zeen, Toya Beach Bar and Grill, In Room Dining and Magnifique Meetings. Wasting no time in bringing his commitment to have mostly all ingredients locally sourced and at the highest quality.
